My Summer Evening Dinner
Posted in Uncategorized on 11/17/2009 02:52 am by adminI had to work yesterday and the last thing I wanted to do was make dinner when I got home. I was tempted to just stop and pick something up on my way home, but I’ve been trying to cut spending lately, so I decided to put forth the effort after all. When I got home, I went out to my small garden to see if anything had gotten ripe. I was delighted to find a cucumber, green pepper and jalapeño pepper. I still didn’t feel much like cooking, but chopping the vegetables to put into a pasta salad didn’t require too much effort. I also threw some hot hogs on the grill while the pasta was in the boiling water. When it was all said and done, we had a nice summer meal for minimal effort and expense. A nice bonus was enough pasta salad for lunch at work the next two days!
